Lemon Yoghurt Dressing
Sweet potato crisps
Eggs, poached
Bacon rashers, fried
Cherry tomatoes, halved
Brown Rice and Quinoa (Sun Rice, 250g)
Sesame seeds, toasted, to dress
Fresh shoots to dress eg Cress, Coriander, Pea Shoots
Place a thin layer of rice and quinoa mix in the base of the serving bowl. Place fritters and poached egg.
Add bacon rashers and tomato
Drizzle with Lemon Yoghurt dressing. Sprinkle toasted sesame seeds and fresh shoots.
Add sweet potato crisps and serve.
The Brown Rice and Quinoa packet is a standard supermarket item. Choose any similar product which appeals, to add some protein and fibre to the base of the dish.
