I usually ramp up the fresh herbs - coriander and mint - in this salad, as they make it taste so very fresh.
Salad
1 - 2 Granny Smith apples, unpeeled, cut into julienne strips
2 spring onions, finely sliced
1 tablespoon fresh coriander leaves
1 tablespoon freshly torn mint leaves
3 tablespoons peanuts
Dressing
2 fresh chilies, seeded and finely sliced
pinch of salt
1 tablespoon palm sugar (or brown sugar)
2 tablespoons fish sauce
1 tablespoon fresh lime juice
Combine all salad ingredients
Mix dressing ingredients.
Stir dressing through salad.
Serve in lettuce cups or heaped over finely shredded crisp green salad leaves.
If you want to add protein, try poached or fried calamari.
