Teriyaki is a Japanese dish of meat or fish that is grilled or broiled after being soaked in a seasoned soy sauce marinade.
This recipe, from the ever reliable Adam Liaw this is his"everyday" quick and easy version. It uses his homemade teriyaki sauce which is also easy to make and much tastier than bottled ones from the supermarket.
TIME: < 30 mins
4 Chicken thigh fillets, skin off
1 tablespoon cornflour
1 tablespoon vegetable oil
Toasted sesame seeds, to serve
Japanese mayonnaise , to serve (Also know as Kewpie mayonnaise, readily available at your supermarket or asian food store.)
Large fry pan
1. Slice the chicken thighs into large, thick medallions, (perhaps one thigh into 4-5 pieces.)and toss in the cornflour to coat.
2. Heat a frying pan over high heat, add the oil and fry the chicken until just browned on all sides but not yet cooked through.
3. Add about 1/3 of a cup of teriyaki sauce and bring to a boil. Turn the chicken through the sauce for a minute or two to coat as the sauce thickens and caramelises.
4. Arrange the chicken on a plate, sprinkle with sesame seeds and serve with mayonnaise.
