Take the lamb out of the fridge and allow it to come to room temperature
Preheat the oven to 250oC (230oC fan forced)
Place lamb in a roasting tray or casserole dish and season with salt and pepper
Tightly cover the tray with aluminium foil or place on the lid and place into the oven
Immediately turn the oven down to 160cC (140oC fan forced) and cook for 2 hours or until tender
Transfer the roast to a carving board, cover with foil and rest for 20 minutes before carving

For extra flavour season with garlic and rosemary or add a cup of stock or wine into the tray before roasting.
