Quick and tasty, this recipe is easily scaled up to serve greater numbers. Great for an everyday dinner or a dinner party! Our favourite fish for this dish is Barramundi, which you can buy frozen at Aldi, very economically. Remember to remove the skin from the fillet before cooking.
1 cup panko breadcrumbs
1/2 cup flat-leaf parsley leaves, finely chopped
2/3 cup finely grated parmesan cheese
rind of 1 lemon, zested with a microplaner
1 tablespoon olive oil
4 x 100 - 150 gram white fish fillets. ( I use frozen Barramundi fillets, skin removed )

Preheat oven to 200°C
Cover a baking tray with foil and spray with olive oil cooking spray
Combine breadcrumbs, parsley, parmesan, lemon rind, and salt and pepper in a bowl. Stir well to combine. Drizzle mixture with oil. Stir until breadcrumbs are coated in oil.
Place fish fillets on tray, external side (or what was the “skin” side) down.
Press breadcrumb mixture onto upper-side of fish fillets to form an even topping.
Place tray in oven, cook for 12 minutes.
Serve with lemon wedges and your choice of salad or vegetables.
