This super tasty dish is cheap, simple, easy and quick to prepare. Definitely a step away from your standard mid week mince dish ;-) And the chili hit of the gochujang will do wonders for your sinuses! If you like things a little milder just reduce the amount of gochujang a little.
You could also try chicken or pork mince as a variation on beef.
Serves 2-3 20 mins prep and cook
500g beef mince
Black pepper
1 tablespoon sesame oil
1 red capsicum, sliced
1 onion (med-large), sliced
3 cloves garlic, chopped
40g pickled ginger (or 1 tablespoon fresh grated ginger)
4 tablespoons light soy sauce (or tamari)
1 tablespoon Gochujang (Korean chili paste)
1 tablespoon ginger juice (use the juice from the pickled ginger)
1 tablespoon honey
25g toasted sesame seeds
30 g chopped roasted peanuts
1 lime, cut into wedges
Saute / fry pan
In a saute pan combine the beef mince and a pinch of black pepper. Cook over medium heat, breaking up the meat as it cooks, until well browned. About 5 mins.
Add the sesame oil, capsicum, garlic, onion and ginger. Cook for 2 mins.
Add the soy sauce, gochujang, ginger juice and 1/3 cup of water. Cook until the sauce coats the beef. 2-3 mins.
Add the honey and mix well. Cook 1-2 mins until the beef is caramelized.
Remove from the heat and toss with sesame seeds.
Serve in a bowl, with your desired accompaniments (eg rice, vegetables, or salad) a wedge of lime and a sprinkling of peanuts.
