1 1/2 tablespoons honey
1 1/2 tablespoons dijon mustard
1/4 cup olive oil
Juice of 1 lemon, about 1/4 cup
salt and pepper to taste
Place all ingredients in a resealable glass jar and shake well. Check for seasoning and adjust accordingly.
Serve over salad greens immediately or store in the refrigerator for up to 3 weeks
