From Wikipedia ..."Constance Spry, an English food writer and flower arranger, and Rosemary Hume, a chef, both principals of the Cordon Bleu Cookery School in London, are credited with the invention of coronation chicken. Preparing the food for the banquet of the coronation of Queen Elizabeth II in 1953, Spry proposed the recipe of cold chicken, curry cream sauce and dressing that would later become known as coronation chicken.
Coronation chicken is very versatile .... serve it with a side salad as an entree or main course, as a sandwich filling, on toast ..... yum.
500g skinless chicken breast fillets, cooked and diced
100g mayonnaise
75g mango chutney
1 teaspoon curry powder
zest of 2 limes
60ml fresh lime juice
1 spring onion finely chopped
1 cup sultanas
1/3 cup slivered almonds, toasted and roughly chopped
Large mixing bowl
In a large bowl mix together all ingredients, except the chicken
Add chicken and toss until well coated
Cover and chill until serving
