A quick and easy method for fried rice at home, using off the shelf, pre-cooked rice
2 x 250g or 1 x 500g pouch pre-cooked, microwaveable Jasmine rice
2 eggs, beaten
1 cup frozen peas, thawed and drained
2 spring onions, finely sliced
10 prawns, cooked
150g chicken breast, diced
4 tablespoons vegetable oil
Soy sauce
Wok
Heat wok on high. Add 1 tablespoon oil
Pour beaten egg into wok, stir constantly 30 seconds, then remove and set aside
Add 1 tablespoon oil to wok
Add diced chicken and fry for 2 to 3 minutes, stirring frequently, then remove and set aside
Add remaining oil to wok, add rice (directly from packet), stirring frequently until heated through
Add chicken, egg, spring onions and prawns, stirring frequently until heated through
Season to taste with soy sauce and serve

As an alternative to diced chicken you can use diced bacon, diced pork or similar
